We have been experimenting with various scallop dishes, we wanted to stay away from the obvious way of serving them with pea puree and parma ham. We wanted to create a dish which could be a starter or main: Seared King Scallops with cauliflower risotto, charred cauliflower, watercress and truffle oil. (K & M)
